Replace it with a brick. Kiln brick is soft enough that you could carve to ship and place in the hole where the quartz glass was. So, how do you set the screw to the correct depth? Set the jaws to the thickness of the glass. Then turn the screw 1/4 turn to tighten just a little bit. Once pressure is applied to the pliers, the glass has to fully break for the screw to come into play. This isn't true. The screw should be adjusted to slightly less than the thickness of your glass. That's really critical when cutting thicker pieces of glass. If the screw is all the way down (like most people have it, but shouldn't), then you apply too much pressure to the score and will have more trouble getting a ...

If you want to cut half inch wide strips out of 3mm glass, any running pliers will do the trick.

I'm a bit puzzled by your comment that the edges cracked and were not sharp. If your top temperature was only 1200F, then that shouldn't be hot enough to round the edges.
Also, a description of the mold you used would help.

That schedule would probably work. For over stainless I usually watch the piece and just hold until it's done the way you want it, however long that takes. 75 on the way up is conservative, but justifiable on a piece that large. Generally I sandblast then fire to around 1350 to 1375F with a short hold. At that temperature it shines but It doesn't really roll the edges. Most high temperature tape that I'm aware of is only rated to 500F, but might hold up longer insulated by glass. Google high temperature tape.
